Light As Air Pancake
Mix
all the dry ingredients together. In a blender add the Mocha Mix, apple sauce
and the mixed dry ingredients. While the blender is running add the water slowly
until you have a thick pancake batter. The blender helps to create a really airy
batter and the pancakes are very fluffy. Use a 1/4 cup measuring cup to pour
batter in batches on a hot griddle that has been greased with margarine. Fry
until it is bubbly on the top and turn it once. Fry for a few more seconds
on the second side. Serve with syrup and for added taste with a tablespoon of
Non-dairy whipped cream.
VARIATION: BANANA PANCAKES: Add 1/2 of a medium size banana (
1/4 cup) instead of the apple sauce and add 1/2 tsp vanilla instead of the
cinnamon. PEAR PANCAKES: Add 1/2 cup grated fresh pears
instead of the apple sauce. Strawberry or peach pancakes: Replace the apple sauce and the cinnamon with 1/4 cup of finely chopped Strawberries or peaches and 1/2 tsp vanilla.
