Rice pudding with fruits This recipe uses Low protein Imitation rice that is available through the special dietary companies. You get to discover satisfaction from this comfort food.
Combine
water, Imitation rice and butter in a saucepan. Bring it to boil and let it
simmer for 25 - 30 minutes or until the rice is cooked. Check the rice during
the cooking that it is not sitting in the bottom of the pan in a big mass.
Remove from heat, but do not drain the excess water. Drain the fruits and
reserve the juice. Add the cornstarch and cinnamon to the juice and 'milk',
stirring until smooth. Add to the rice mixture and return it to heat. Cook on a
slow heat stirring constantly, until the mixture is thickened. Add the sugar and
remove from heat. Let cool. Chop the drained fruits and stir it into the
pudding. Tastes better if chilled. Serve with a tablespoon of the Cool Whip on
top. Serves
